Our First Blog

Welcome to the first Blog from Family Health Research and thank you for taking the time to join our family of parents dedicated to providing healthy home environments for our children. Family Health Research was founded to address one of the leading healthcare problems in our society today: Childhood Obesity.  

Like many parents in this country my wife and I were confronted with the fact that our child had a weight management problem and both my child's pediatrician and school nurse advised us on several occasions of their concerns regarding my Child’s weight yet, neither provided us with the guidance, education or access to medical programs that would help us address our child's health problem.  

While not a health care clinician I began to thoroughly research this topic of childhood obesity and weight management by studying various childhood weight management books and programs to obtain the necessary knowledge base to develop and implement an action plan to begin to address my child's weight problem.  This experience made me realize that there was not a specific resource for parents of children struggling with weight management that research, consolidates and provides the resources available to parents that provided basic information on how to begin to affectively address a child's weight problem. This is why Family Health Research was founded and published our first book “Help, Our Children Are Overweight” by Frank Longo.

 This Blog provides will provide articles from the culmination of many hours of reading, researching, development and implementing the necessary steps to assist any family in attempting to address the child's weight problem as well as programs and books available from Family Health Research website.   The team at Family Health Research is always on the lookout for update information on addressing childhood obesity as well as providing  up to date and researched information that is of focused specifically upon parent’s perspective and most importantly provides access and the basic information that helps a parent create a positive home environment for your children when addressing a weight problem. 

Many parents will also benefit from reading the books referenced by our team that address weight management specifically from a parents' point of view.

As part of Family Health Research website will be providing you with recipes for your family that promote the healthy home environment for you and your children.  However, since this is our first official Blog, we decided to include our first recipe in this Blog.


Our first Recipe
Healthy, delicious and full of tradition 

Giambotta (pronounced gem bet’)


I could not think of a better recipe as the initial recipe to share with the family health research community then one that my family has used for years. 

This recipe is centuries old and was created in the foothills of southern Italy. This simple vegetable stew is easy to make, cooks very quickly, and it is not just a Stew but can also be used as a sauce over pasta or rice, and it can even be eaten cold alone or placed on salads. 

Giambotta is composed of just 5 vegetables: tomatoes, potatoes, onion, peppers and eggplant.

Here is the recipe: 
Ingredients:

2 each of similar size of tomatoes
potatoes
onions
peppers (color of your choice)
small eggplants (or one large eggplant).  

Directions:

  1. Take all of these vegetables and cut them into bite size pieces (½" squares).  

  2. In a large pot combine all the vegetables, season to taste (except for any herbs add them at the end of cooking).  

  3. Add ¼ cup of water to the pot. 

  4. Place it on the stove over medium heat.  

  5. Cover and cook the vegetables for thirty minutes, until all the vegetables are tender.  

  6. Remove from heat and add any herbs at this time.  

You can eat it hot off the stove as a stew or you can serve it over pasta or grains like barley or rice and you can also serve it cold use it cold to compliment a salad. What is so about this stew is that it's very versatile meal that provides a very nutritious meal for you and your family. 

So, there you go, you're on your way to creating a healthy environment in your home with a very traditional century old recipe Giambotta.  I hope your family enjoys it as much as our family does as well.
